Sebastian Matias Torres Vallejo was born in Cuenca, Ecuador. He has lived part of his life in Chicago, Los Angeles, and New Orleans. He attended Loyola University in New Orleans and graduated from the Culinary Institute of America. In 2014, he started his own business with Bayou Caffee, bringing all his experience and knowledge to creating unique dishes and an inviting atmosphere in Cuenca, Ecuador.
