Shrubs are sweet-and-tart cooking and drinking vinegars.
Infused vinegars are the same, but unsweetened.
Use both in dressings, marinades, sauces, craft cocktails, teas, and alcohol-free fruit spritzers.
Mora, Piña, Ginger, Garlic, Basil and Oregano/Thyme/Rosemary
BONOBO’S BOB’S BAKED CORVINA
1 1/2 pound skinned Corvina
4 parts EVOO
3 parts Bonobo Bob’s Oregano/Thyme/Rosemary Shrub
1 part Bonobo Bob’s Basil Infused Vinegar
1 part Bonobo Bob’s Garlic Infused Vinegar
2 lg. tomatoes sliced
12 Bonobo Bob’s Pickled Garlic Cloves
6 Green onions, choppedPreheat oven to 350 F. Whisk together EVOO, OTR Shrub, Basil & Garlic Vinegars.
Place Corvina in a dish and pour 1/2 of the Shrub/Vinegar mix over it. Let sit 20-30 min.
Meanwhile put tomatoes & pickled garlic in oiled roasting pan, pour over remaining shrub/vinegar mix, and bake.
After 20 minutes, remove pan from oven and put Corvina on top of the cooked tomatoes. Sprinkle with green onions.
Cover and bake 15 min.
Uncover and bake another 5-10 min. or until done.
